As far as which of the two tablets you should buy, they share many specs, but the Galaxy Tab S9 FE has a 10.9-inch screen, whereas the Tab S9 FE+ features a 12.4-inch panel. They are both IPS LCDs with a refresh rate of up to 90Hz.
Both tablets run on the Exynos 1380 platform, have 45W wired charging capabilities, and are equipped with side-mounted fingerprint scanners. They are also IP68-rated for dust and water resistance.
