Why does Consumer Reports say that when the Galaxy S6 has a better design, build quality, power package and user experience? Well, it doesn't have a removable battery, a water resistant body, and a microSD card slot but all of these features are present on the Galaxy S5. Consumer Reports itself agrees that some people won't care if they no longer have the option to remove the battery while this will be a dealbreaker for others. However for precisely this and the aforementioned reasons it would rather have customers purchase the Galaxy S5 instead of the Galaxy S6.
At the end of the day the ball is in the customer's court. It's your money and you're going to have to live with that device. Weigh all of the pros and cons yourself to find out which device suits you best, and if it makes sense to you, forget about what everybody else says.
